Galette du Roi

I’m always amazed by the layers in puff pastry like croissant, millefeuille, chausson aux pommes (apple turnover)… and last but not least la galette du roi (the king’s cake), it’s one of my favourite French puff pastries.
I used to live in the Butte aux Cailles neighbourhood, a less well-known but quirky part of Paris. Just around the corner from my little studio apartment, there’s a bakery shop. My best friend Hiromi and I loved its galette du roi. Didn’t remember which one of us introduced galette du roi to the other, but that’s what we usually went for whenever we fancied some pastry, and she would always give me the little trinket found in the cake as a token of her well wishes. I miss her… as I was baking the galette du roi, I couldn’t help but to think of my best friend in Paris and reminisce about our days in Paris. This time, though I think I will give her the trinket instead as a token of my sincere wishes in the aftermath of the earthquake in Japan.

was a bit apprehensive how it would turn out when I was rolling and layering the dough... now seeing the layers makes me happy ;)
