Czech Pastry

Koláč is a traditional pastry from Czech Republic. It’s slightly sweet and light, baked with fillings and topped with a crumbly mixture of sugar, flour and butter. You find this in every Czech home, grandmother’s recipe handed down from generation to generation, usually eaten with coffee or tea at breakfast, after lunch or simply any time of the day especially during the summer months when fresh fruits are abundantly available in the gardens and markets.
Think of all the delicious and colourful summer berries and summer fruits that you can add to this cake! Strawberries, blueberries, blackberries, raspberries, cherries, red currant, black currant, peaches, prunes... and rhubarb (not fruit but a plant) is particularly refreshing to add to this cake. I have had the privileged of learning how to bake Koláč from a Czech friend. Because it’s not yet summer, we used bottled cherries. Though I prefer fresh fruits, it doesn’t change the fact that this cake is simply delightful to eat - light, juicy and crumbly. Thanks Eva for sharing the recipe ;)
